Chocolate Coconut Macaroons
The health benefits of coconut oil, and recent findings about just how good chocolate is for us make this desert a major beauty food. It’s totally delicious. Doesn’t hurt, either, that you can make it in 5 minutes.
Ingredients
- 1/5 cup organic coconut oil
- 1/4 cup raw organic cocoa powder
- 1/2 cup raw organic agave nectar
- 1 tsp organic vanilla extract
- 2 cups shredded organic coconut
- 6 – 8 blanched almonds (depends how big you like your macaroons)
Preparation
- Put a plate into the freezer to chill it
- Put all of the ingredients except the almonds in a food processor
- Blend until everything is well mixed and the coconut oil liquifies
- Scoop the mixture into balls and put them onto the chilled plate
- Add a blanched almond on top of each
- Put them in the fridge for an hour or so before serving.
You can use honey or another sweetener, if you like, depending on where you are in the agave nectar and fructose debate. According to Dr. Weill, agave nectar is just fine, so long as you don’t overdo it. I’m with him.
